Sorbitol, also known as glucitol,is a sugar alcohol, which the human body metabolizes slowly. It appears as a white, odorless crystalline powder or colorless crystal in its solid form, and can also exist as a clear, colorless viscous liquid in solution. Sorbitol is sweet-tasting, with a sweetness level approximately 60 - 70% that of sucrose, but with a lower caloric value. It is highly soluble in water, has good hygroscopicity, and is relatively stable under normal conditions.
