Sodium saccharin is the first artificially synthesized non-nutritive sweetener. It is soluble in water and has a sweetness of 200 to 500 times that of sucrose in a dilute solution. It has a bitter taste when the concentration is high. It is sweet when heated under acidic conditions. Disappear and form bitter anthranilic acid.
